This full-day excursion is about seeing tradition in action. Leaving Bologna behind by private car, you’ll travel into the Emilia countryside to visit working farms and producers where Italy’s most famous foods are still made according to strict, protected rules. Rather than focusing on tasting alone, this tour centers on the process: how milk becomes Parmigiano Reggiano at dawn, how grapes must age properly to become traditional balsamic vinegar, and how time, environment, and regulation shape artisan cured meats. 

With a knowledgeable local guide, you’ll explore how a region without great cities or royal courts, built global prestige through simple ingredients and strict protective laws and standards. Throughout the day, you’ll learn how to read authenticity on labels and in practice: what DOP truly guarantees, why certified products cost more abroad, and how counterfeits exploit Italian names without respecting Italian rules. By the end of the day, you won’t just remember flavors; you’ll understand how to recognize, choose, and support the real, authentic products, both in Italy and once you return home.

Your day begins in Bologna, where you’ll meet your guide and driver before setting out into the Emilia countryside. As you travel, your guide introduces the region’s agricultural landscape and explains why production happens where, and when, it does. The first stop is a cheese producer, scheduled early in the morning to coincide with the cheese-making process, allowing you to observe production as it happens.

The rest of the day unfolds across a small number of carefully selected producers, typically including a traditional balsamic vinegar maker and an artisan cured-meat producer. The order may vary depending on logistics and your interests, but each visit emphasizes observation, explanation, and context. In the afternoon, you’ll make at least one final visit before returning comfortably to Bologna.

You are pre-paid for this tour, the car service, and a number of tastings. During the course of this tour we will sample a variety of foods. If you have a food allergy or other dietary requirements, please let us know in advance so that we can take this into account. We also suggest bringing along a bottle of water with you.

Can I be picked up from or dropped off at a location other than Bologna? In some cases, yes. Alternative pickup or drop-off locations may be possible and are reviewed case by case, depending on logistics and availability. Additional fees may apply, and we reserve the right to decline requests that are not feasible.

Do you accommodate dietary restrictions? Yes, we do our best to accommodate a variety of dietary needs. Vegetarian and halal options are available when requested in advance. We don’t recommend this tour for vegans as alternatives are limited. Tastings are never mandatory, and guests are welcome to participate at their own comfort level.

Can we request a specific location or visit a site like the Ferrari Museum? We recommend allowing our guides to curate the itinerary. This experience is designed and led by professional guides with deep expertise in Italian gastronomy and food culture, and it focuses on authentic, local, historical, and family-run establishments. Motor Valley attractions such as the Ferrari Museum are excellent experiences, but they are outside the scope of this tour. These sites are best enjoyed independently or on a separate day, as they already offer comprehensive self-guided or in-house tours.

Can we make purchases during the tour? Of course. While this is not a shopping tour, many of the places we visit have small shops, and staff are happy to assist with purchases. There is absolutely no obligation to buy anything.

Can we do this tour by train? Unfortunately, no. This tour requires a private vehicle, as many of the shops and workshops we visit are not easily accessible by public transportation.
